PLAIN & PURE ARTISANAL CACAO PASTE

Ethically sourced organic cacao, sustainably produced by Guatemalan farmers in the Suchitepéquez department of Guatemala.
BEAN-TO-BAR
The cacao beans ferment in banana leaves before being ground in the village mill. Naturally sun-dried in the open air, they are then lightly roasted to eliminate potential microorganisms, enhance their natural aroma, and facilitate manual peeling, expertly carried out by women, guardians of ancestral knowledge.
This artisanal process ensures the optimal preservation of cacao’s natural benefits.

RECIPES
ONE LOVE CACAO HOT DRINK
1 - Finely chop the cacao on a kitchen board while you heat the water, which should not be boiling.
2 - Add the chopped cacao to the water.
Look at the texture of the liquid and adjust the amount of cacao to taste.
Approximately 25-28 g for a 250 ml cup.
3 - If you wish, add spices such as cinnamon, vanilla, cardamom, chilli and salt.
We recommend maple syrup for sweetening.
Alternatively, spice your water before adding the cacao, for example with ginger or aromatic herbs.
4 - Mix everything together with a whisk if necessary.
***For an extra touch of magic, sprinkle the process with your beautiful thoughts!***
For a ceremonial serving, use up to 43 grams of cacao per cup.
ANCIENT MAYA RECEIPE
Cacao, honey, chili pepper, allspice (notes of clove, cinnamon, nutmeg), vanilla and achiote (a red coloring agent). Cacao drinks were made with water and eventually thickened with corn flour.
This recipe was given to Sakara in 2022 in the village of Uaxactun in Guatemala, where one of the only Mayan 'chocolateras' has been discovered to date, in a princely tomb. It comes from analyses carried out on this vase.
CACAO CREME
For 4 people
1 - Heat 5 dl of milk in a saucepan.
2 - Dissolve the finely chopped cacao in the hot milk.
You can add maple syrup or vanilla sugar.
